The production of Extra Virgin Olive Oil sees our company engaged in the cultivation of the nocellara Etnea.
As you know, the types of olive trees are numerous, the one we use to produce our oil is Nocellara Etnea. Compared to the classic cultivar that we find in different places in Sicily, the Etnean variety differs in that the characteristics of the soil are unique. Volcanic eruptions and the ash beach on our land enriches the earth with minerals. These represent a natural fertilizer for plants that enrich their fruits with flavor.
Citrus fruits for example provide the red color in oranges, but the olive tree will also provide different characteristics from other crops. This is why we specify the origin of our Nocellara crops with the suffix Etnea.
Production of Extra Virgin Olive Oil from the Nocellara Etnea cultivar
The Nocellara Etnea tree is recognizable in some respects. It is in fact a plant with a medium-dense foliage. This cultivar enters production at a rather early stage. Flowering and pollen production is very rich. The yield of the extra virgin olive oil that we obtain by pressing the Etnee olives is around 16% and is therefore quite low. The olives that you will bring to the table are large in size, usually over six grams in weight!
The ratio between stone and pulp of our olives is very high and this character makes Nocellara Etnea a cultivar of the best for the production of table olives.

The oil produced from our olives is characterized by the natural richness of polyphenols and therefore has excellent antioxidant properties which, as is known, slow down the aging of cells. Ideal to help our body defend itself from cardiovascular and neurological diseases. and neurological.
